Food Geography: BBQ

Do you like BBQ? I do! Well, the Southern regions claim to have the best BBQ.

Food is a good reflection of the culture in each region. Each region has a dominant food that reflects the place. The dominant food says a lot about the resources that are available in each region.  In the Southern regions, one of the dominant foods is soul food. Soul food includes collard greens, corn, sweet potatoes, and fish. Also, BBQ is one of the dominant foods in the south. "Many Southern locales claim to have the best barbecue (BBQ, or just "Q")" (Mayda 215).

The origin of BBQ are not exactly known, but the origin can be traced to Spanish, Native American, European, and African influences. BBQ in the south is cooked slow, and it is smoked . That sounds good.

Each state in the south has its own way of preparing BBQ. " In the Carolinas, a base fire of oak with hickory BBQ is accompanied by sweet tea. Regional South Carolina savory sauces feature tomato, mustard, Ketchup, or vinegar and pepper" (Mayda 215). In Virginia, BBQ pork  is prepared  with sweet sugar and molasses sauce. Each region has its own unique recipe and technique in preparing their special BBQ. The different types of BBQ reflect the regions culture, the regions resources, and the regions sense of place (Mayda 215).

Here in Los Angeles there are two places that say they have the best BBQ in the Los Angeles area. The two locations are in Compton. The first place is called Bludso's B-B-Q, and the second place is called Jay Bees Bar-B-Q.
